Baking Bread: Simple, Easy and Natural

Baking bread is so easy, I don’t know why more people don’t try it.  This recipe is the basic Foccacia Recipe from a previous posting, it’s just formed into loaves instead of on a cookie sheet.

3/4 cup warm water
2 tablespoons yeast
2 cups milk
3 tablespoons sugar
3 tablespoons vegetable oil
1 tablespoon salt
7-8 cups of all purpose flour.

Preheat oven to 400F.

Start by adding filling your food mixer (equipped with a bread hook) with the warm water.
Add the yeast.  Watch the action to make sure the yeast is active.
Heat the milk in the microwave to ensure it’s warm, as well.
Add the sugar, vegetable oil and salt to the warm milk and mix well.
Add to the yeast and water mixture.

Put the mixing hook on your mixer and add about 4 cups of the flour and mix well until smooth and elastic.

Switch to your dough hook and gradually add the rest of the flour until incorporated. Knead until smooth and elastic.  Dough should leave the sides of the bowl.

Now that the bowl is clean, and the dough is in the middle, add oil and swoosh around the dough.  Turn the dough over so the top is oiled as well.  Cover and let rise until double.  With a pastry cutter, cut dough in half and roll into two separate logs.  Grease and fill 2 loaf pans with parchment paper.  Grease the parchment paper.  Place “logs” in each pan and let rise in a warm place until doubled again.   Bake in a hot oven (400F) for about 25 to 30 minutes.
