Extreme Peanut Butter Cookies

My new neighbor dropped off a bunch of vegetables from her garden the other day.  WOW!  They looked so beautiful and we felt grateful to have such a thoughtful and kind neighbor.  As a “Thank you” we decided to bake her a bunch of  Extreme Peanut Butter Cookies.  One kind act deserves another!

 

Extreme Peanut Butter Cookies

These cookies take peanut butter to another level.  They are the best tasting and most “peanutty ” you will ever try.  The reason is the roasted peanuts that are ground and added into the cookies to replace some of the flour.  It doesn’t get much better then that!

2 3/4 cups of all purpose flour
1/2 teaspoon each of baking soda, baking powder and salt
1 cup butter at room temperature
1 cup brown sugar
1 cup white sugar
1 cup crunchy peanut butter
2 large eggs
2 1/2 teaspoons vanilla extract
1 cup roasted, salted peanuts

Preheat oven to 350F.

Using a food processor, grind the peanuts until they resemble bread crumbs.  Do not over mix!  You don’t want more peanut butter….you just want ground peanuts!

Combine flour, baking soda, baking powder and salt in separate bowl.
In your mixer, beat butter until creamy.  Add sugars and beat until fluffy (about 3 minutes)  Scrape down bowl as needed.  Beat in eggs, one at a time and then the vanilla.  gently stir in dry ingredients.  Stir in ground peanuts and do not over mix!

Using a small ice cream scoop (these are a must for those who bake a lot of cookies.  Your cookies will all be perfectly uniform and you don’t have to get your hands into the dough)

Space the cookies so they have room to grow!  I recommend you add another baking session and have perfect cookies instead of spacing them too closely and ending up with mis-formed cookies.  The ingredients and time required for these is enough of a reason to ensure they are done right.

Bake in the oven for about 12 minutes (or until golden brown)
